French cuisine Balinese flavours

During the Melbourne Food and Wine Festival we are very lucky to have Chris Salans, chef and owner of Mozaic Restaurant in Ubud Bali, host a dinner with us. Chris will showcase the flavours of Bali whilst using his French trained techniques

Amuse bouche

Wagyu beef carpaccio, Sumatranese rendang spices, mushrooms, Parmesan 

Seasonal seafood,  fresh herb pasta,  Balinese nasa gede, coconut emulsion

Confit ocean trout, kaffir lime dressing, fennel salad, Oscietra caviar

Pressed pork, tender octopus, palm sugar gastrique, mangosteen, sesame gomasio

Due of Wagyu beef, braised & seared, baby carrots, vanilla emulsion, crispy grains

Valrhona chocolate fondant, turmeric ice cream, Szechuan red wine 


A brief introduction on Chris Salans

“American born and French raised, Chris began his career training at Le Cordon Bleu in Paris before taking internships in France at Michelin Starred restaurants. His career led him to New York where he worked as Sous Chef for David Bouley and then as Chef de Cuisine for Thomas Keller in Napa Valley. It was during this time that Chris developed such awe for Asian cuisine that he accepted a position as Executive Chef of the Legian in Bali, marking his first foray into the Asian culinary scene.”

In 2001 he opened Mozaic Restaurant Gastronomique in Ubud. It is in Mozaic that Chris developed and mastered his own style of cuisine, marrying the techniques of western modern cooking and presentation, with the native ingredients and amazing flavours of Indonesia.

In 2015 Chris opened the more casual venue Spice, where all the ingredients are locally sourced, with an emphasis on the surprising flavours and healing properties of Indonesia’s aromatic roots, herbs and spices.”

To keep alive the memory and cuisine of the late Paul Bocuse, we would like to introduce

“Le Salon Paul Bocuse Experience” a dining experience like no other

Up to 10 people can dine in the salon and take part in a 4 or 6 course menu, based on the dishes made famous by Bocuse. All the dishes will be matched with superb French wines, and will be explained in detail by one of the chefs

This will truly be a memorable evening for you and your guests! 4 courses with matched wines is $2,000 and 6 courses with matched wines is $2,500
